In the West of Nicaragua, Matagalpa is the second largest coffee region in the country, and this is a washed coffee from producers Marlin Tinoco, Aura Valle, Guadalupe Siles and Jeannethe Cruz. Once harvested, the coffee is left to dry ferment overnight for about 10-12 hours, and once the coffee reaches its fermentation point, it’s thoroughly washed.

The result when we’ve roasted it is an indulgent and complex cup that has a smooth, buttery mouthfeel. We’ve compared it to a delicious dark chocolate mousse both in flavour and in texture, with hints of sweet, refreshing pear throughout.
