The region of Callayuc, Cajamarca located in the tropical jungle of north of Peru is home to the Segovia Family business. Comprising of 6 farms operated by 6 separate family members covering 14.5ha of land at altitudes exceeding 2000masl. The Segovias are second generation producers carrying out harvest and post-harvesting with the whole family to minimise costs and maintain standards.

Once harvested, the coffee is left to dry ferment overnight for about 10-12 hours, and once the coffee reaches its fermentation point, it’s thoroughly washed. The result when we’ve roasted it is a clean and bright cup that has a smooth mouthfeel. Expect sweet tangerine, milk chocolate and subtle crisp apple acidity.
